I read somewhere that Snowville, UT has a population of roughly 167, so you know a thriving restaurant in Snowville is going to be… well, everything a tiny-town diner should be. I pulled off the freeway for a cup of coffee and a snack and ended up at Mollie’s. This is the kind of place that all places should be like. Home-cooking, friendly waitress who knew everyone’s name (but mine) and I’m pretty sure every diner knew every other diner by name. I felt 5% awkward because it was SO obvious that I was a random wander-in-off-the-freeway customer, but she treated me right just the same. Hot coffee and the delicious house-recommended strawberry rhubarb pie, and I was back on the road.
